And head cheese SOUNDS way worse than it is. Think of it more as a terrine made with all the tiny, tasty bits of meat from the animal’s head. You can easily eat cheeks, but the rest of the edible parts of the head would be too tedious to get to and having an actual animal head on your plate would be fairly disconcerting for most people.

maplesyrupParticipantI asked them if they had head cheese but the lady was kind of non-committal about it.
“We might have that in the future” was her comment, if I recall correctly.

GoGoParticipantI took my husband yesterday, he almost wept with joy. That chicken pate stuff is to DIE for!!!
Also got some bacon dogs and other meats.
Can’t wait for the bacon bloody mary mix to make an appearance!!

charlabobParticipantI finally had the right confluence of cash, time, and a parking space, so I bought the chicken liver pate. It was supposed to be our appetizer — it wound up being appetizer, main course, and dessert. It is SOOOOOO good. Using it up within two weeks will not be a problem.
I stirred the schmaltz on top into the creamy liver stuff — I’m sure I would be healthier minus schmaltz — but who needs healthy? If you hate liver and you can bring yourself to taste the swinery’s pate, you’ll become an exceptionalist. “I hate liver except —“
