    Ahhh, we move on from bacon to rum. Gawd I love this blog. My paternal grandmother made her Christmas rum cake during the week between Christmas and New Years. And that was the rum cake for the next Christmas; 12 months away. She would periodically take down the rum cake from a top shelf of a kitchen cupboard; unwrap its many layers of cloth; drizzle on some rum; wrap it up; and stow it away again. With all of that continual soaking of rum, it never spoiled and was potent by next Christmas. Of course I was a youngster at that time so the “potent” part is only by heresay! ;~)

    Do you know if it matters if you use the dark rum? I have light on hand.

    The other recipe said to toast your nuts (I’m gonna leave that one alone for now). That sounds good!

    ellenater – Don’t think it matters as the other recipes just say ‘rum’.

    I still have some white overproof rum that made it back with me from Jamaica that is going in the next batch…we’ll see.

    Perfect timing. I have time to make goodies this year and this is fantastic. A good excuse to visit the liquor store this weekend too! Yum! Chocolate + dark rum = goodness.

    Alki Bakery used to have fantastic rum balls, though my most recent memory is probably circa 1995. Worth checking.

    According to a recipe in my mom’s recipe box here is her recipe for rum balls:

    3 ounces of unsweetened baking chocolate

    1 cup almonds

    1 (3 ounces)package cream cheese

    1 cup confectioners suger

    1 teaspoon of instant coffee

    1/4 cup rum

    1/2 cup chocolate sprinkles

    Melt Chocolate

    Process almonds in a food processor (or by chopped almonds)

    Transfer to a medium bowl and add cream cheese, confectioners sugar, instant coffee and rum

    Stir in chocolate. If dough is to soft to form balls refrigerate for one hour

    Roll into 1″ balls; roll in chocolate sprinkles. Store in a container in the refrigerator until ready to serve.

    They turned out killer. I mixed a few suggestions from recipes and on here. I used Walker’s shortbread cookies in place of vanilla wafers and I used pecans and toasted them. I used a very good quality cocoa powder too and rolled in confectioners sugar. PROBABLY added a little too much rum for texture but they were tasty!

    Celeste, I’m trying your mom’s recipe next year!!!!
