Sneak peek inside Spring Hill (the restaurant)

That photo is courtesy of Mark and Marjorie Fuller, showing a partial peek inside their still-under-construction Spring Hill Restaurant and Bar, which they hope to open on the north end of The Junction (former In Bloom space) in mid-May — “if all goes smoothly from here,” is Mark’s caveat. Menu? we asked, checking in for the first time since our January update. “Still in the works and not quite ready to reveal yet.” Hours will be 5:45 pm-midnight, 7 days a week. (All ages, he told us previously. And in case you wondered, no relation to the BlueStar development of the same name on the south side of The Junction that we’ve been telling you about since October.)

    I heard that the chef or owner previously worked as the head chef at one of Tom Douglas’ restaurants downtown, the Dahlia Lounge. But that could just be a rumor…

    Also, did anyone else catch our own Bakery Nouveau in the new issue of Sunset Magazine. Very cool! Love, Love, Love their twice baked almond croissants.

    I second the tv-free sentiment. Nothing ruins good restaurant ambiance like a blaring TV above the bar.

    We are fortunate to live in a dynamic community with such a great entrepreneurial spirit! Many communities across the country are envious of places such as the Northwest with such a healthy business climate. I can’t wait to try Spring Hill. All the best to this new West Seattle business!

    Letter in today’s (4/23) West Seattle Herald says that we need a “Family” Restaurant “…like a Denny’s, Applebee’s, or Shari’s….”

    no Denny’s, no Shari’s, please…I suppose I could handle an Applebee’s…

    and when it reopens we WILL have a Family” restaurant…the Charlestown Cafe…better grub that Denny’s any ol’ day…IMHO

    After Guadalajara and a few other restaurants and businesses have disappeared due to development I hope this place is family friendly or that people see this need and open up more restaurants in general. We need more restaurants for adults and families. Development promises this but I am not seeing it yet .. seems like an excuse to win people over on how great development is. Development is necessary but in my opinion it has gone too far.. like this is Ballard south. God, I hope my neighborhood does not turn into Ballard .. I have to go there occasionally and I hate it. It is congested beyond belief and dumpy and they are still building condos. Guess I can sell out in the end and make a lot on my house and just take off but I don’t want to do that.

    Paul you might have some competition we already haev another discussion going on in the Forum on opening up a wine/martini bar with great aps down on Beach DR…we are also in search of $100K :) Any takers???

    I dont think W.Seattle needs a chain restaurant but maybe a great hamburger joint like Red Mill or soemthing like that for a more family friendly and affordable restaurant…

    What’s the city going to do with the old firehouse on 35th once the new one is built. My husband and I have been thinking that would make a good family diner if we had the money to get it started.

    The official line is that it will be sold. It’s an official city landmark so it can’t be razed.

    We are in a recession folks. Restaurant numbers are down across the board everywhere. Save your money. People are not eating out that much anymore. Its very very risky to open a restaurant right now. If you have money, invest it somwhere else instead of a restaraunt and wait for better times. Better yet, bars actually do pretty good in down times. People are more depressed in a recession and drink more or have no job and have nothing else to do except hit the bars. I would love to eat and drink out three times a week plus, but my wallet says no first before my gut line does if you know what I mean.

    If I were to vote for a burger joint over here it would have to be Red Mill. Dicks doesn’t even have vegetables on their burgers…unless grease counts as a veggie? ;)
    I will say one good thing about Dick’s- they pay the best out of any fast food place- and offer health insurance as well. Maybe all the door to door canvassers could get a job slinging burgers?

    We do have a burger joint here in WS – Pepperdocks! on Alki – the fries are the best around IMHO…

    Amen on the Pepperdocks comment LisaM! Why would we need a Red Mill when we have them? Plus, there’s that new place coming to 16th and Holden, for when Alki is too crowded. Of course it remains to be seen what their burgers are like…

    The Firehouse would make a great Pub. Being that I live right by it… And there are quite a few places that families take their kids to.

    Eliott Bay “Brewery” is always crawling with kids when I would like to sit and enjoy a drink with friends as is most of the other “adult” restaurants in WS.

    Angelina’s is always full of children. Heck, even Salty’s and Easy Street, has kids running amok in them.

    Let us grown ups without children have someplace to enjoy without your children.
