christopherboffoliParticipantAnother Forum post that goes against my better judgment, as the last time I posted about the bacon-caramel shortbread they sold out of them never to be seen again. But West Seattle Blog readers are a very special demographic and I’ll be damned if I’ll let readers of lesser news sources hear about this first!
I popped in to our local butcher shop today and I stumbled upon a new item on the counter by the register. They’re calling them “Bacon Joy” in manner of Almond Joy though the latter doesn’t even come close.
They’re more like fresh coconut macaroons made with their house applewood smoked bacon and almonds, covered with dark chocolate. I have to say that the one I had (which I ate and opened at the counter even before I left the shop) didn’t have big chunks of bacon in it. In fact, the bacon was fairly subtle. It just contributed a wonderful savory richness to the otherwise toasty/chewy coconut macaroon.
They’re selling them in two-packs which is kinda evil as one is quite enough. But I just can’t bring myself to leave one in the bag. Eating the second one sort of feels justified in the way of tidying up.

Garden_nymphMemberYum! Was the coconut warm and gooey? Did you stock up prior to posting this? I bet these freeze well. Do they sell bacon bits? It’s the perfect weather for a good ol’ baked potato.

christopherboffoliParticipantActually, no. They weren’t hot out of the oven, which is good because the chocolate might have melted off them. But the bacon was a surprisingly good addition to the coconut.
Even if they didn’t have the bacon they were extremely well-executed. I shared them tonight with a pastry chef who said they were among the most perfectly executed coconut macaroons she had ever tasted. I bought all of the packages that were on the counter in front of me. But the staff assured me that they had plenty more.
It’s funny that I haven’t seen bacon bits for sale in there. You’d think that would be a natural product for them. What they do have, which I have never seen before and is a bit unusual, is pastrami bits. A few nights ago I made some creamy mashed potatoes with grated aged gouda and pastrami bits and it worked really well. The pastrami bits are more spicy than smoky and impart plenty of saltiness.
The main reason I went into the Swinery today was to try their new lamb bacon. I’ve heard it tastes just like pork bacon on the front but with a rich lamby-ness on the backend. Haven’t tried it yet but I’m intrigued.

Last time I stopped through the shop, tuesdayish, they had English bacon and the lamb bacon in addition to the standard applewood bacon. I’m sort of kicking myself for not getting the lamb but I have to go back up there today, so..

celeste17ParticipantI was in last night and was told of these. I told the woman that sounds just up my alley and can’t pass it up and when I got home with my purchases last night no cookies! :( Just as well I really don’t need the calories.

DMcGMemberAl, just keep track of the Swinery Blog. They posted about the lamb bacon a couple of days ago.
Now while all this bacon stuff is good their best new addition, in my opinion, was the Morcilla (Spanish blood sausage). So tasty.

wundrgrrrlParticipantI sent my BF over to get some bacon macaroons for a friend we were meeting for happy hour. Sadly someone before him had just bought the last ones… HOWEVER, he brought us bacon shortbread and bacon caramels which we sampled as “dessert”.
Now, see, I’m not a sweets fan, plus I wear braces. So normally caramels are on the “don’t even try” list, but I just had to… And I must say OMG – they were HEAVENLY!! So soft, and just the right hint of bacon. So much for the New Years Diet!!
