very interesting Sue, I will have to check it out. I can make an awesome date paste that I think should work fine. Most the people who came to my juice bar, were more interested in Dairy-free due to an intolerance, so I didn’t think too much about it.

I agree about the cheese never being like the real thing. ALthough, when I was trying to transition from grilled cheese and quesadillas, I tried the rice cheese (realized it was made with Casen- duh). But it did help soften the blow and get me off cheese for good. I didn’t know how to make anything but quesadillas, grilled cheese and cereal, so I was not sure I could do the vegan thing.

I don’t miss cheese at all, because I immediately think of the aftermath, where it would sit in my stomach like a gut bomb and I wouldn’t poop for months..haha.

The cheese I make with the high speed blender is like a cream cheese, it’s very tasty. It can be soft or semi-firm where you can slice it, if it’s strained. I have made herb, garlic and other tasty flavors. It’s fresh and easy using just cashews and water. I don’t think they could sell such a thing at the store cause it has a short shelf life.
