sbreParticipantAs I type I’m enjoying a 3-egg omlete I made for myself.
When cracking the eggs I noticed that the last two that went into the bowl were significantly harder to crack than the first one.
Egg #1 was the last of a dozen from Safeway, the final two came from a carton purchased just yesterday at the WS Farmers Market (Green Bow Farms).
So, local birds are better???

Plus, it’s just another aspect of the “Seattle Freeze”, which in reality goes beyond Seattle, and encompasses at the very least Western Washington, and perhaps the entire State.
It’s not that we are rude, or cold. Actually once one gets to know us we are quite the opposite.
We…….ummmmmm…….just have a little trouble coming out of our shell.

I’ve noticed the same thing with farmer’s market eggs; they’re tough on the outside but so very delicious inside. Yeah, just like the rest of us. ;)

dobroParticipantChickens and their eggs are what they eat. I grew up on a farm and kept chickens here in WS for several years. If chickens are fed table scraps,allowed to run free and choose their own food, and have a little chicken feed mixed in, rather than fed antibiotic-laced garbage, you will find a huge difference in the shells and the egg composition itself. The flavor is amazingly better and the shells will be thicker.
