I’ve seen these pre-Lent treats offered before but I never really had an opportunity to try Bakery Nouveau’s rendition until today. Apparently the genesis of these Polish doughnuts (pronounced pawnch-kee) was is in helping you get all of the decadent stuff – eggs, sugar, grain alcohol (added to the dough to prevent them from absorbing too much oil when they’re fried) – out of the house before fasting for Lent begins.
I think Bakery Nouveau’s version is baked, as opposed to fried. But they’re no less tasty, with little bits of orange rind baked into the tender dough. It is the fillings that really stand out. They say they’ll have a selection of flavors that they’ll be rotating over the two weeks these will be available.
The flavors they had today were apple, raspberry and chocolate. I expected something akin to a standard apple doughnut filling. But theirs is a golden puree with notes of caramel and ginger that has a surprising amount of dimension. The raspberry filling isn’t jelly but a delicate raspberry cream. And I think the rich, dark chocolate filling really works best with the bits of orange in the dough.
Really yummy and worth a try.
