CMParticipantI’m getting my hankering again, and I can’t make the trek to New Mexico this year. I’ve seen Hatch Chiles in the past at a couple of local stores, but none yet this year. Can anybody tell me where I can score some locally?

anonymeParticipantA couple of years ago I saw both fresh and fresh roasted Hatch chiles at Whole Foods Roosevelt. Haven’t seen any this year so far. I may be doing a NM trek this fall; if so, and if it’s not too late, I’ll pick some up for you.

concarneParticipantI don’t think they’ve made it to the markets/stores yet but last year they had a on-site roaster at the now de-funked Haggen’s Stores and also at Met Market in WS. You can also call Charlie’s Produce (who does the on-site roasting) and ask them when they’ll be in the stores. 206.625.1412

anonymeParticipantI think we’re talking about the non-canned ones, which are sensational. The aroma of roasting chiles is the stuff dreams are made of…and concarne is right, it may be a bit early yet for chiles.

anonyme, I appreciate the offer, but I’m looking for 30-40 lbs. Yes, they’re magical fresh off the roaster, but years ago I tried an experiment and it worked wonders. I actually prepare them just like I was making chipotle. Smoked over pecan wood until dehydrated, and either left whole or ground into powder. It’s a treat I tell ya!
I thought I saw huitlacoche in the Mexican market on the west side of Ambaum as you enter Burien. Castillo’s market in White Center may have it too. Good luck!

JKBParticipantfyi, I’ve had decent results growing Serrano peppers here. They end up tiny (~4cm) compared to supermarket produce, but super intensely flavorful.
Other varieties, not so much. Often I get healthy plants that just don’t bear fruit.

anonymeParticipantProbably too late for today, but Morgan Thriftway was roasting and selling Hatch chiles today. They were almost gone when I was there a few hours ago, but at least we know they’re available and making the rounds….

anonymeParticipantIn the past, I’ve found fresh huitlacoche by asking at Mexican owned produce stands at Pike Place and other markets. They’ll bring it in for you on a given date, and it’s beautifully, perfectly fresh (well, for corn smut).

CMParticipantFunny. Love the stuff, but it’s hard to talk about “fresh” when we’re talking about corn rot. Not to brag, but I made a batch of green chile sauce tonight over lamb burger sliders on brioche buns. It did not suck at all. I’m a happy guy. Thanks all for the input.

JTBParticipantAt times in the past, I had difficulty finding a place that had even canned huitlacoche on a regular basis. On on one occasion when I did find one, I stocked up with about a dozen cans. That elicited giggles and a knowing look from the clerk and a comment about how much I must like huitlacoche which reminded me that according to legend, Aztecs attributed magical and aphrodisiac properties to it. I smiled and winked. Sad to say, I can’t confirm the legend from my own experience but it sure makes some lovely sauces and mole.
