cjboffoliParticipantI have been following the progress of Swinery Meats: the new artisan charcuterie makers that produced all of that excellent bacon we enjoyed back in December. Their exceptional products were a huge hit all over Seattle and they were ramping up to start selling at farmer’s markets in the coming weeks. But it seems some city bureaucrats have thrown a huge wrench into the works.
Apparently the City health inspectors have shut down Swinery Meats after giving its owners a Byzantine, bureaucratic run-around that has lasted weeks. But the shutdown order apparently has nothing at all to do with cleanliness or their failure to adhere to health standards. I have no doubt their facilities and procedures passed inspections with flying colors. It seems they have been shutdown out of spite.
I had a report today that the City has refused to permit them to sell their meats because of the chef’s connection to the now-defunct underground restaurant called Gypsy.
This story is still developing. It seems the Swinery website has been pulled down. I have heard rumors of a fire sale to friends and family of their stock of bacon and other meats that they had ramped into production for the farmer’s markets. I’ll post additional information here as it becomes available.

What we really need less of is local food sold locally and more “bacon” shipped from points beyond Port Orchard, like the Midwest, from large corporate hog farms. Hempler’s is my go-to bacon when something fancier and more expensive is not available. But this smells like a tit-for-tat payback for Gypsy and the CC nose-thumbing of the Liquor Control Board.

charlabobParticipantSemiseriously, I think this can be laid at the hooves of our mayor — more of his ongoing attack on any kind of “nontraditional” culture. I’m still upset about Gypsy — now this! Vendettas do not become our government.

What TheMemberIf I find some bacon washed up on the beach should I report it to the authorities or eat it? Sure, if it’s bacon stuffed into a running shoe I would report it but just wondering what the regs are?

rockergirlMemberYeah I noticed that he seems to have quite a few negative comments from people – hopefully he will get his act together so we can continue to enjoy his excellent bacon – although at $12 per pound at the farmers market seems a bit to expensive.
