    Tracy: I don’t find their bacon fattier than other small-batch, house-cured bacon. But actually, I like to reserve the fat and use it in other dishes. My BBQ shrimp with stone-ground grits recipe (a Charleston, SC breakfast favorite) is much enhanced with Swinery’s bacon fat.

    I freeze it into little blocks which I keep in the freezer until I need them. Sure, we’re talking about saturated fat. But I feel better using it knowing that the pigs are raised on organic feed without being pumped full of antibiotics and hormones as factory pigs are.

    so….when you make that Swinery bacon and save the drippings, use it to make popcorn…then you have a vehicle for that bacon butter. But you really won’t need it :)

    Popcorn, hashbrowns, scrambled eggs, all do pretty well with some of that bacon grease added. Sometimes I’ll brown meatballs in the stuff. I was just thinking this morning of everyone for whom this descent into swine began in the trunk of christopher boffoli’s car. And my subsequent trips on the #36 to the culinary communion for more. Buying this bacon used to be a lot like getting pot in vancouver.

    The bacon is back! I was just in the Swinery this morning and the manager told me that they just cured a big batch to catch up with demand. And the sale price is the same as last year’s “trunk o’ my car” variety: $10

    just made my first Swinery trip! bacon candy bars ROCK! will be cookin’ up my first batch o’ bacon tonight. can’t wait!

    I had to pick up a couple of the bacon chocolate bars myself after seeing mr. boffoli’s other post, they seemed to be going pretty quickly when I was there about an hour ago, unless they have a secret stash behind the counter or something.
