FlyonthewallMemberBoffoli – since you’ve never solicited his establishment how do you know that’s his source? When I talked to him he was sourcing from smaller venues.
I have no problem with reducing the carbon footprint in the interstate commercial beef processing industry, but I think you should ask the butcher before assuming. You have done this man a great disservice, especially on a thread that was supposed to give him a rave. This is why I RARELY post on this blog.

FlyonthewallMemberDBP – thank you! Exactly my point! Boffoli hasn’t even eaten his meats or had a direct discussion with him but has now decided to trash his product w/o knowing all the facts. Not once in the butcher’s response did he say that it was mass produced. In fact he did say he had local sources of meat in the PNW as well as sources from smaller venues nearby and the Midwest. All you have to do when you’re in the Butcher’s shop is ASK HIM! He has many options which Boffoli doesn’t seem to acknowledge.
Also DBP – you were right on about the prices. The butcher’s prices are in par with Safeway. In fact we got so much meat for such a good price from the Butcher that we stocked our freezer. This comes from a person who has shopped at PCC and Met Market at ridiculous prices and I refuse to do so any longer now that the Butcher is here.
If people here don’t visit the Butcher b/c of Boffoli’s misguided rant about his product, then you are truly missing out on a healthy venue for terrific meats at terrific prices.

But puh-leeeeeez . . . Mr. Boffoli was NOT trashing. Either directly or indirectly. He was merely voicing his opinion. An opinion which I happen to agree with in general.
The only thing he did wrong (if he even did anything wrong at all) is that he wasn’t as careful as he could have been about the context in which he voiced his opinion.
I’ve seen this exact same scenario play out before, where people assume that whoever lost the last point is now fair game for intense criticism.
And then it escalates.
And then, next thing you know . . . it’s vapor.
I don’t wanna see even one more good thread go down over something like this. And I don’t want anyone to be flagged, lectured to or scolded by the moderators ever again. That’s the deal.
So please, if you agree with me, or you even like me just a little bit right now, don’t name names, and be as nicey-nice to your “opponent” as you possibly can be, even as you are disagreeing with his position fiercely.
Because who knows? Tomorrow? Or the next day? Or the day after that?
He could be your best friend.

miwsParticipantFlyonthewall, not only do I appreciate your positive, supportive comments for the Live Butcher, I appreciate your comment on comparable prices as well.
I have to admit, I don’t do much price comparison, and decide to go to Store X, because they have the best price.
This is probably mostly due to not having a car for many years, so ended up grocery shopping almost exclusively at West Seattle Thriftway for many years, as it is just across the street from where I lived for 11 years, and was the closest grocery to my residence previous to that, being only a few blocks away.
Anyway, the point I’m trying to make, is even though I don’t deeply scrutinize prices, I believe the Live Butcher to be comparable.
One thing I base this on, is the price of Ribeye steak.
That has long been my favorite cut, and being among the fancier cuts, is only the occasional treat.
I just finished my second Ribeye form the Live Butcher, and like the first on I had from there about two and a half months ago, it was perfection.
I find their price on Ribeye to be comparable, if not a bit less expensive, than Thriftway, which also has excellent meat.
So yeah, great locally/family owned business, whose origins go back literally decades
Oh, and now am I not only known as simply a regular customer by Tom, and the young lady that works with him, I’ve been busted on my connection as a WSB participant as well. (Not that that’s a bad thing!)
When I went into Live Butcher this afternoon, Tom commented on this thread, and my participation.
Unbelievable. ;-)

While christopherboffoli’s second post was not “Bashing” I did find it a little condescending. I agree with flyonthewall that there is a time/place for everything and a right way to express your opinion.
Related, but unrelated. I bought 3 lbs of stewing meat from Meat the Live Butcher. Hand trimmed to perfection and best of all (yippee) uniform in size. It was such a pleasure not having to pick through and match pieces of meat to have consistency for cooking time.
When I lived in Germany I frequented the local Metzgerei (Butcher)and they told me what to look for when choosing a butcher at home.
1. Is the shop clean and well organized?
2. Is everyone friendly?
3. Are you able to speak with the butcher directly and is the meat cut where you can see or out of sight in the back? If out of view, does the butcher present it to you for inspection before wrapping it?
4. When the Butcher cuts the meat, does he really look at each piece or is he on automatic pilot?
5. Unless you desire a lot of fat, does he take the time to remove it?
6. Most important question. Does the Butcher really listen to you and if you have questions, is he able to offer possible solutions?
Based on the above criteria I would highly recommend everyone stop in and Meat the Live Butcher.

i stopped by today and had a great chat with the butchers and staff..
you will be glad to know that they are ordering in some of the grass fed beef midweek…
in the meantime i am going to have a tough time staying away from their venison sausage…

rockergirl5678ParticipantSo glad so many west seattle white center peeps are stopping into meet Tom and support his business! Also happy to hear he is getting some free range beef in soon. I have known him since I was a little girl as his family’s store on pacific hwy. was our neighborhood grocery store – so basically we grew up shopping from his family. I am so happy he has opened not far from where I live so I can once again support his business. I know people I grew up with in Riverton who live far and wide who have stopped in to visit with him and get there fix of jerkey, sausage and excellent meat! Please give him your support as well, he is and always has been a great asset to the community his business is in!

crushercatMemberJust bought my grass fed burger -Thanks Tom for making it so easy…all you gotta do is ask! They also have game and free range chicken…lots of healthy options. I like to do business in my neighborhood – We also have a small business here. So Tom is our go to guy for meat!

BreezyParticipantWe drove over today and in spite of the detour (I WILL figure out how best to motor around WS!) got us some meat! Clean store, orderly case, polite butcher, and excellent meat. Made a bleu burger tonight that could’ve been plated at a fine restaurant for 3x the price it cost me. Thanks to original poster for bringing this local shop to a newcomer’s attention!
