Another progress report – this one from The Bohemian

The team putting together The Bohemian in the space that used to be Leslie’s Country Store (3405 California, next to Spiro’s) is finally ready to reveal more about their plans. They answered our e-mail by writing up a cheery blurb that we decided to share in its entirety:

We are very proud to announce The Bohemian, coming in ˜08 to West Seattle!

My name is Jason Todd Rice and I am the Chef & GM.

My brother, Eirik, is the Bar & Service Manager.

The Bohemian is going to be a classic coffeehouse by day. We offer Espresso & French Press Coffee service, assorted Organic Tea, fresh pastries, Bagels, Chocolates, etc…

We will offer a full Saturday & Sunday Brunch as well, with our own twist on brunch & lunch fare. We will expand to a full Café with a brunch-style menu and table service during the week; if/when we get a strong response from the community in that direction.

In the evening we will be creating our own eclectic, globally influenced fare with ingredients, techniques, and flavors from many bohemian cultures around the world; as well, our own versions of Americana comfort foods with a twist.

We will have an excellent wine list, the best local and imported beers & ales on tap, a full bar for our signature cocktails and house-made Sangria by the glass & pitcher too.

We will endeavor in every aspect of our business to use locally grown, sustainable & organically produced ingredients & products, wherever possible. As well, we will be conscience of waste and endeavor to always use recyclable and even compostable materials.

    I am thrilled to be getting a new coffee/cafe place. I just want the coffee to be good. The Admiral neighborhood desperately needs good coffee.

    08! I’m amazed they can afford to pay rent for so long on a place without being open for business. Sounds like it’ll be a great spot, though.
