Try SANCA – School of Acrobatics and New Circus Arts. My kids have be with SANCA for 5 years running with after school, spring break and summer camps. SANCA is a nurturing, fun and noncompetitive environment that is very enriching. Check out their website – http://www.sancaseattle.org/

P.C.C. has cooking classes for kids that are super fun. They also have financial assistance but you need to ask.

For the actor in kids, try classes at the Children’s Theatre in Seattle Center. http://www.sct.org/classes/ Summer programs are really fun as the Center is hopping in the sunshine.
One last option is the Center for Wooden Boats. http://www.cwb.org/ They have great kids classes in the summer but I think its for 9 and up. We squeaked in at 8 but YRMV.
