After we referred to the forthcoming, long-in-the-works Giannoni’s Pizzeria at Westwood Village as “mysterious” one too many times, their owners surfaced in our inbox and shared some details about what they’ll be doing when they open (south side of WV, next to Sally’s Beauty Supply). And they confirmed, they’re not a chain! Click ahead to read their full e-mail:
We are hoping for mid-June as we are just beginning our interior build-out. The mall has been wonderful to work with and allowed us in while exterior work is still going, in order to accommodate our hopes to open before school is out, given the high population of schools in our walking vicinity. We think the kids will be a big audience for us. As far as delivery goes, we have been frustrated as well that Pagliacci’s would never come over to “our side” of 35th so of course we will service the southeast side of West Seattle for sure, if not all of it, with the waterfront, Fauntleroy and Arbor Heights areas included as well. We likely won’t be able to start this until fall since we have a lot going on right now, as you can imagine.
Our goal is to offer “real” pizza – not pre-made or pre-packaged dough and sauce like the corporate chain varieties. We are trying to do all of it on a tight budget with mostly money left to us as an inheritance – hence, the family name, “Giannoni”. So, when we open we will just do a sort of soft opening, with the minimum of what we will need to start serving great pizza, salads and perhaps a gelato treat – with the promise of more to come.
