JoBParticipantI have a pot of tomato curry chicken and chickpea stew bubbling in my slow cooker filling the house with tempting smells…
i’ve got jasmine rice, but i think i have to find a trader joes for some nan to go with it :))))))) the dogs need dog food anyway:)

BonnieParticipantI’m a loser cook today because I have friends coming over to let the kids watch a movie. So I’m opening a can of chili. LOL! I cook much better things other nights.
Kind of looking forward to just opening a can though.

JenVMembertonight will be veggie ‘sketti sauce on mushroom polenta…unless I get really lazy and decide not to cook.

Last night it was a chicken breast and broccoli. A certain someone who joined weight watchers last week didn’t have any damn flex points left. *pouts*

swimcatMemberYmmm, JoB, that sounds like a great recipe- can you share it?? I’m always looking for slow-cooker recipes. My sister is cooking up a chicken curry dish tonight too, and has invited me over for dinner- I get to enjoy a homecooked meal with none of the work! Yay!

inactiveMemberCook ahead night on my indoor grill for me.
I’ve got a skirt steak out – will spice it up with a nice ensemble of Mexican spices (New Mexico, please) and put it on my indoor grill. I love that thing. I’ll have corn tortilla’s with it and lots of cilantro, melted cheese, diced plum tomato and home-cooked pinto beans. Topped off with Frontera chipolte salsa.
I’ve also got a nice BIG piece of Uwajimaya tuna I’m going to divide and grill as well. I’ll probably do some of it a thick teriyaki and some just suriachi and garlic. Freeze it and also use it for emergency tacos. :)

JoBParticipantwe watched the latest top chef last night.. and the quick fire challenge was to create an interesting meal from the contents of a pantry…
you should have heard the whining… One woman.. yes woman.. even said that she thought canned and packaged foods were for housewives who didn’t have time to cook.
i think this season of top chef is full of chefs who think too much of themselves…
as much as i envy the luxury of heading t the market to find what is fresh that day to prepare a meal… a top chef should be as capable of pulling a good meal out of the leftovers in the fridge and the contents of the their pantry… as they are of creating a menu and shopping for it.
So m.. for you i will divulge my “secrets”…
i threw the leftover chicken from monday or so into the plug in roaster i use for a slow cooker along with the last half of a box of chicken stock… i added 2 pkg of trader joes punjab choley to lay down the flavor (basically red curry with chickpeas) threw in a half pint of V-8 because it had been in the fridge long enough… added a couple of cans of rinsed chickpeas.. and a diced red pepper (also near the end of it’s shelf life) and a diced onion that i presteamed in the microwave and i have been letting it burble all afternoon.
i fully expected to need to add spices.. but the base flavor from those prepared side dishes from trader joes is doing a fine job of filling my house with the aromas of long simmered curry…
nope.. i’ll just be adding rice and nan:)
we had pasta tossed in romano, assagio & parmesan cheese and pine nuts with a single serving of clams in a butter broth (from canned foods outlet’s frozen section) over the top last night…
from another cooking show about the restaurants in Venice.. Anthony Bordain.. ..
sometimes you need to know when a simple recipe is just plain good enough…
or as common wisdom goes…
why mess up a good thing?
sometimes a can of chili stands just fine on it’s own:)))

pamMemberI was feeling guilty after reading what everyone was cooking. So I baked the salmon, topped it with lemon slices, a bit of salt/pepper, a little brown sugar on the edges, wrapped it in lettuce then poured in a little white wine. Couldn’t fix rice a roni since everyone else was workin’ it tonight so made some fettucini and tossed it in olive oil, garlic and crushed red peppers. Little green salad on the side.
Don’t do this to me tomorrow – it’s too much pressure!! ha-ha

We are making bread and the smell is pure Heaven! It smells like a Subway Restaurant in here, but better!

i made so much curry that we had dinner.. i made 2 lunches for hubby.. put two dinner for 2 sized servings in the fridge and froze enough for another 2 dinners…
i think i am cruising on leftovers or one of those frozen family style entrees i got during safeway’s big sale tomorrow… :)
i’ll saving the ideas i got tonight for another time… if i had known it was this easy to get everyone talking about making great food.. i’d have done this long ago..

This is the first fryer I have had that actually works well enough to fry stuff crisp with no oil absorption. The temperature fluctuations of the previous fryers made the oil breakdown prematurely as well.

JenVMembergot lazy but not too lazy – ended up making sockeye salmon with Tom Douglas Rub with Love (have you tried it for salmon? OH EM GEE!) broccoli and brown rice. It was actually better than what I was going to cook, and took a lot less time.

swimcatMemberThanks for the recipe JoB! I love the improvisational skills- I usually end up tweaking all recipes because an ingredient is too expensive or I want to use what is already in my pantry.
I just bought a new slow-cooker cookbook from Williams Sonoma, so I’m excited to try out some of those recipes over the next few weekends. And I can’t wait to watch Top Chef tomorrow- I DVRed it and haven’t had any time this week to watch it.

i could have done better cooking out of that pantry than most of the contestants did…
of course. i have been a either a working mother or a housewife needing to cook a meal from a pantry for a long time .. i have experience:)
i often can’t afford or won’t buy the quantity for one recipe of ingredients used in many cookbooks..
so i have learned to love the art of substitution:)

Haven’t tried the Rub for Love, but I’ve certainly heard of it.
I have been buying spices at World Spice down on Western below the Market. They have incredible blends, as well as pure spices. The woman who owns the shop is a bit of a genius with these blends, I would say. A number of West Seattle restaurants use her spices, as well as many other places in town. Even if you don’t actually buy anything there (it can get spendy quick), it is worth the trip into the shop. The fragrance will knock you off your feet.
In my cupboard right now, I have two (can’t buy too much at once or it’ll go stale) rubs – the BBQ Fin & Feather Rub and the Besar rub. I recently finished their cinnamon – which I use every day. Unlike anything I’ve ever had off the grocery store shelf, I will tell you that! Too good.
Anyway, it’s like a spice adventure with that place. Next time I’ll try something else. Happy eating. :)
