    Hello Lovely People!

    I just got reading about Cardoons. Does anyone grow it? Do you grow it from seed or divisions? Does anyone cook with it? Which parts do you cook? How do you tell the difference between a cardoon and an artichoke? Please feel welcome to share any knowledge about this plant!

    I have been growing them for years. They are perennials. I grew them from starts. I don’t cut or eat them because when they go to seed they are very beautiful. The flower itself is lovely dried as is the open bloom.

    Cardoons and artichokes are both part of the thistle family. I grow both from seed and have enjoyed them in our yard as ornamentals for years. while the artichoke “flower” is edible before it blooms, cardoons are not but many use cardoon leaf stalks in cooking (think celery). I just grow both as ornamentals in the garden and if you mulch around them in the fall they will usually come back the next year unless we have a severe Seattle winter. Cardoons are much taller plants than artichokes and the blossoms are slightly different looking.
