Not really local, but one of the best I have seen for a reasonable price, is the Paradise Inn lodge at Mt Rainier.

On the few hot summer weekends here, I like to drive up early and enjoy the cool air before sitting down to a couple of hours of family and good food.

Kind of a road trip but it it beats buying an air conditioner :)

It has been closed for renovations for quite a while (2 years?) but is supposed to reopen in May for the 08 season.
