Contact the Humane Society or a rescue organization - breed specific or otherwise - such as American Brittany Rescue, Seattle Purebred Dog Rescue, MARS, ARPH, etc. They are always looking for volunteers who can help screen potential new homes, do home visits, help with transporting animals to their new homes, and more. If you are able to foster animals, even better. This gives the animals a chance to show their true colors in a home environment, rather than a noisy shelter, and you are able to give a good report on their temperament, therefore placing them (theoretically) in the best home possible.
I have been fostering and helping with transports and home visits for ABR for several years. I have no particular connection with the breed, but I wanted to help and their org was the most receptive and nicest to work with. Some breed groups can be a bit rigid ("for the sake of the animals"), so don't give up if the first one you contact doesn't click with you, or their "agenda" is too strict.
FCAT - feral cat assistance and trapping and FAF - friends of the animals are two west seattle cat groups that always need help. FCAT does a lot of kitten socialization and needs fosters, FAF also often needs foster help and help with the kittens/cats at Next To Nature.

Not entirely sure, but I believe Next To Nature uses volunteers to feed the adoption cats and clean the cages. That might be organized through the rescue agency that manages the adoptions. Wouldn't hurt to drop in and ask though.
Want to volunteer with wildlife?
Puget Sound Bird Observatory
Seattle Audubon
Seal Sitters??? (I don't know anything about their volunteer program)
I am here to 2nd FCAT.
That is all.

I second Puget Sound Bird Observatory, especially if you prefer birds over cats: http://pugetsoundbirds.org/get-involved/
They definitely need volunteers for all kinds of interesting work.
Yes FAF does adoptions threw Next to Nature and is always in need of help in cleaning the cages.
Marianne just like all rescuers has a full time job and does an unimaginable amount of work to help the cats that she rescues.
Kitty Harbor
Friends of the Animals
Seattle Animal Shelter
Thank you everyone so much!!! These are some GREAT ideas! I wish I had enough time to help at each one. But being able to help just one animal is so fullfilling!
Thanks again!
