I think those difficult people seem to have the loudest voices. And not so good listening skills.

The super-saccharine, extroverted "nice" people (just ask them) are the WORST. Of course, I dislike almost everyone on an equal basis.

I have worked in customer service for more years that I am going to admit to.
Most people just want to feel validated and feel like they are being heard. If we do not set the expectation, others will set it on their own and if they do not get what they expect dissapointment ensues.
There is a very small portion of society that is terminally grumpy, has no sense of humor or are just plain, padded walls crazy...as an example, I had a person on the phone that claimed to own Bank of America and that he was the heir to Marilyn Monroe's estate.

Whenever I contact the authorities with questions about how to address letters of general complaint, I get the runaround.
Eventually someone snaps at me, or just hangs up the phone.
Which proves my point.

Next time you go to a restaurant, try it out. Be rude and difficult to the waiter/waitress.
Somehow, I think you won't like it.
Reminds me of a scene in Dumb and Dumber. Harry complained to the waitress that his soda didn't have enough fizz/bubbles in it. So the waitress took the drink and blew a bunch of bubbles through the straw and said: "is that better?"

If you're a difficult person, just own it.
When you go out to a restaurant or show, tell the staff up-front that you're difficult, that you know you're difficult, and that you're working on it.
You'll prolly get better service that way. Hell, who knows. They might even give YOU a tip.

Jiggers, depends on you definition of difficult, challenging is ok...bitchy and cranky...not so much.
