    I am so excited about The Heartland! I heart your concept very much! I love the name and the logo. I love that you will have late hours - really need that here! I can't wait to see the menu!!!!!

    I think if it hadn't been over 25 years since I waited on tables and bartended in The Market, I think I would apply for a position! ;)

    I wish I was looking for a job, but I am willing to act as a consultant on all things related to Midwest, especially Wisconsin, culture.

    A few tips:
    1. If you serve Bloody Mary's for the love of god please serve them with a shorty beer back.
    2. Instruct your wait staff to respond to a patron who freezes and doesn't know what to order yet, "ok, all righty then, we'll start with you last."
    3. No shit hey! The bartender and wait staff response to any customer opinion they can find common ground with regarding local weather conditions, traffic, politics, or any other reason to have a brewski. (ex: what a mess out there, or What a great day, or did you see that sh*t?
    4. The alternative if said opinion is offensive. Silence. Followed by, "Oh fer chrissakes shut it or take it somewhere else."
    5. All age polka dances. Seriously, ... there's a garden, what a garden, only happy faces bloom there.."

I'd like to propose someone opening a biergarten somewhere on the Westside with those long picnic tables so people are forced to sit with strangers and a stage for a polka band with maybe the occasionally folk singer. I miss my nights at the Capital Brewery in Middleton on those lovely, midwestern summer nights.
