Restaurant serving huitlacoche?

Does anyone know a Mexican restaurant, either in West or greater Seattle, that serves huitlacoche?

For those not familiar with this exotic delicacy, it's corn smut - the stuff that U.S. farmers consider a crop-destroying blight. The blackened fungus is scraped off of the corn cobs and lightly cooked with peppers (often poblanos) a bit of cheese and some epazote for seasoning. The most divine concoction you've ever tasted.

I've never seen it served outside of one place in Santa Fe, but would love to find it here.

Think of it as mushrooms that grow on corn, and it's much more palatable, hammerhead.

  9. "Corn smut in a can" sounds like something one might expect to eat in the Maricopa County Jail.

  10. And leave it to good ol' Gladys to know exactly where the smut is happening! ;-)
