As I'm already on my SECOND jar of Swinery creamy chicken liver paté (in as many days) so it seems I'll be joining you in line to sign up for the 12 step program to break the addiction to this stuff. I've been spreading it on hot, toasted bread so that it melts down a bit. On the second trip over I tried a jar of their fig jam and found it pairs very nicely with the paté.
One of the things that was a delightful surprise about this stuff (in addition to the venison terrine which is also impressive) is that it isn't in the least bit gamey. Over the years I have found that this kind of thing has an undeniably gamey top note. I guess I always assumed that that was the nature of the beast, so to speak. But this experience has made me realize that it is a freshness issue. I applaud the Swinery for their commitment to local, sustainably produced food. And while I don't mind paying a little bit more to know I'm supporting local farms, at the end of the day it is all about the freshness of the flavor in the food that really matters most.
If you're feeling as guilty as I was about the health consequences of ingesting large quantities of this rich, buttery chicken liver paté, take heart in the following information: I did a bit of research yesterday and discovered that (despite the cholesterol and fat) this stuff isn't as automatically bad as one would think. It is actually packed with iron, minerals, protein, folate and B vitamins.
