Rave: The Swinery's Creamy Chicken Liver Pate

    OMG. Sublime. The freshest and creamiest I personally have ever tasted. Right now, at lunch, counter samples with Macrina (?) baguette slices are available.

    The $8 jar tells me I should consume it within 14 days. Amusing to think I could make it last past this weekend, let alone two weeks.

    Thanks westseattledood. It was one of the menu items I was most curious about... because I believe I can make a Chicken Liver Pate that would make a Jewish mother weep. I have definitely got to get over there and compare. The Gauntlet has been thrown down!

    Soooooo light and sooooooo buttery - like butterflies gently fluttering on the tongue. I have no pate skills, whatsoever, so I am in awe.

    I am trying to tell myself to pace my purchasing there, but oy veh, not gonna' be easy!

  4. Yes! I picked up a jar of it yesterday, they had it out on the sliced baguette and I was unable to come home without some of my own. Four of us ate about half of it pretty quickly.

    That place is really incredible. Also it can be potentially dangerous for the wallet, I found myself wanting to just buy everything to save time deciding. I'm so happy they're in the neighborhood!

    Passed on the pate, but left with steaks, andouille sausages, prosciutto and kid happily munching on some of the best sliced turkey we've come across. And the other display/sample meat is EXQUISITE.

    Just do what the Bacon Tells You.

    I knew I should've tried it when I stopped in yesterday! Instead, I left with a pound (which came to 5, good-sized, links) of bacon dogs, a pound of their salami, and a panchetta sandwich (which I shared with my husband, later. SO. so. good.) If their card reader would've been up and running, I would've been in big trouble. But since I only had a set amount of cash, I escaped without doing too much damage. Next trip may have to involve some of the pastrami, ham, cheeses and the chicken pate...

  9. Hubby went to the Swinery at lunch today; came home raving about the chicken pate! Came home with bacon and a meatloaf/bacon sandwich. Aren't we lucky to have the The Swinery in West Seattle!

    Amen again to the card reader being down. I went the other day and only had 20.00 on me so I got out without loosing my shirt! :) I got some bacon dogs, salami and some blue cheese. I can't wait until I go back. I want to try a leg of lamb or some pork.

  11. so i should leave my debit card at home and carry cash when i stop there???

    it is inevitable that i will stop for the bacon, if nothing else... and i am not known for my will power when it comes to delicious food.

  12. So how are these bacon dogs I keep hearing about? Glad to hear they sell a bacon/meatloaf sandwich, that sounds more to my liking than this chicken liver pate...eek!

  13. I too was saved by the lack of a card reader and only having $20 cash on me. Apparently they're still waiting for everything to be finalized with the bank to get the card reader up and running. At least that's what I was told last night.

    I definitely need to get back and buy some more. The goat leg is definitely calling to me.

    LOL CMP. To each her/his own I guess. The way you feel about pate` I feel about blood sausage. I do need to confess that I have never had blood sausage, but just the thought...eek!

    Wonder if they have pickled pigs feet! Use to eat them as a kid with my daddy.....they were actually pretty good! Have not ventured there as an adult - has anyone?

  20. westseattledood: Thank you for giving this topic the attention it deserves. As I'm already on my SECOND jar of Swinery creamy chicken liver paté (in as many days) so it seems I'll be joining you in line to sign up for the 12 step program to break the addiction to this stuff. I've been spreading it on hot, toasted bread so that it melts down a bit. On the second trip over I tried a jar of their fig jam and found it pairs very nicely with the paté.

    One of the things that was a delightful surprise about this stuff (in addition to the venison terrine which is also impressive) is that it isn't in the least bit gamey. Over the years I have found that this kind of thing has an undeniably gamey top note. I guess I always assumed that that was the nature of the beast, so to speak. But this experience has made me realize that it is a freshness issue. I applaud the Swinery for their commitment to local, sustainably produced food. And while I don't mind paying a little bit more to know I'm supporting local farms, at the end of the day it is all about the freshness of the flavor in the food that really matters most.

    If you're feeling as guilty as I was about the health consequences of ingesting large quantities of this rich, buttery chicken liver paté, take heart in the following information: I did a bit of research yesterday and discovered that (despite the cholesterol and fat) this stuff isn't as automatically bad as one would think. It is actually packed with iron, minerals, protein, folate and B vitamins.

    Cash or check; stopped on the way home and had neither. :-( The case was full of pate and the first thing I saw was bacon meatloaf sandwich. It was 6 minutes 'til closing and there were ten people in line.

    This is a real butcher shop, but a much improved version of what my grandfather had. They procure animals in their entirety, so if you want ANY part of an animal which is not in a case, they will cut it to order for you. Just give them a couple of days.

    Pate. Cured meats. Bacon meatloaf. All good IN MODERATION. People, please keep your cholesterol counts in mind.

    And eat a salad once in a while.

    Yeah, with some nice flank steak sliced over the top. Or maybe some greens stewed with a bunch of bacon and a ham hock.

    And head cheese SOUNDS way worse than it is. Think of it more as a terrine made with all the tiny, tasty bits of meat from the animal's head. You can easily eat cheeks, but the rest of the edible parts of the head would be too tedious to get to and having an actual animal head on your plate would be fairly disconcerting for most people.

    I asked them if they had head cheese but the lady was kind of non-committal about it.

    "We might have that in the future" was her comment, if I recall correctly.

  30. I took my husband yesterday, he almost wept with joy. That chicken pate stuff is to DIE for!!!
    Also got some bacon dogs and other meats.
    Can't wait for the bacon bloody mary mix to make an appearance!!

    I finally had the right confluence of cash, time, and a parking space, so I bought the chicken liver pate. It was supposed to be our appetizer -- it wound up being appetizer, main course, and dessert. It is SOOOOOO good. Using it up within two weeks will not be a problem.

    I stirred the schmaltz on top into the creamy liver stuff -- I'm sure I would be healthier minus schmaltz -- but who needs healthy? If you hate liver and you can bring yourself to taste the swinery's pate, you'll become an exceptionalist. "I hate liver except ---"
