Protein needs at NV

    While working with one of the kitchen coordinators yesterday ( he was helping to shovel chips)it was noted that there is a lack of protein in camp. Because they have no refrigeration, canned meats are a good option. Eggs would work as they would most likely be used before they would spoil. Smoked meats, jerky, pepperoni and such would be other protein sources. Frozen solid meats would work as long as the quantities wouldn't surpass the need. Since there are over 100 people in camp, that's hard to envision. Use your imagination. Thanks.

  2. frozen meats work really well.

    i cleaned out all that stuff from the bottom of the freezer yesterday so there will be meat in the pot for today's meal...

    bringing meat into the camp frozen gives them time to plan how to use it effectively.

    bringing ice for the cooler at the same time helps extend the life of perishable food donations.

    Outside of Hawaii.. and my husband...
    i have never seen a group of people get more excited about SPAM ;->

  3. I have to rotate my spam and tuna from the earthquake kit so I will drop off a bag today or tomorrow.

  7. it's 12 lbs, and frozen; would need to be thawed in fridge first to be safe for grilling (wow, didn't know that was possible) can it really be cooked safely all the way through on a grill? the last thing NV needs is food poisoning

    Diane my Dad grilled out Thanksgiving turkey for at least 20 years, and we all stayed healthy.

    We cooked one on our Weber charcoal grill several years ago and it was one of the best we ever had. If NV has a bbq with a cover I'd say go for it. Diane's right tho..it needs to be safely thawed then cooked immediately.

  10. I know zero about grilling, but do know a bit about food safety; doesn't it need to be thawed in a fridge first? I can do that if folks down there want to grill it; Mike? let me know please

  11. anyone know what the weather is supposed to do?
    on a day like today a turkey in the oven sounds pretty good... though it would drive my dogs crazy...

    on a sunny day.. not so much.

  13. Just talked to Kitchen Coordinator Chris, and he said if the turkey was thawed, he could butcher and grill it.

  14. Beans are an excellent source of protein - both dried or canned would make an incredibly inexpensive, healthy and filling bean soup.
    I remember my frugal Irish Grandma used to keep a huge pot of bean soup simmering on the stove alot of the time. She'd occasionally refresh with extra onion, celery, carrots, cabbage, etc., etc.
    Bean soup is still my favorite soup.

    Hey guys -

    Your mention of bean soup is kind of along the lines I have been pondering about what kind of good storage proteins are available. I've been perusing the Asian and hispanic markets in White Center and Burien pricing bulk beans and rice. But I am sure there are other sources in the Chinese ID or elsewhere. Bulk beans and bulk rice can be purchased for $, relative to the number of people such staples will feed. Consumed together, with some spices for flavor, they are a complete protein at their most basic, fwiw. The permutations and variety of beans to cook simply with are endless.

    40 lb bag of beans or rice also should stores nicely in a large bins. The bottom line is bulk proteins are pretty cost effective.

    Buying anything in bulk is cost-effective. I wish I had the money to just go purchase all this myself, but I don't. So I'll share here and maybe somebody else is in a better position to act on it.

    I have also been scoping for sources of 40/50 lb. bulk oatmeal thinking that's another inexpensive, high-value grain which can fill many empty tummy's for hours after breakfast.

A year+ ago my family and I did the "Million Meals for Haiti" event and the project was actually assembling meals that were sealed in a plastic bag that were a healthy, nutritious, just-add-water soup. If someone made up a simple, tasty soup we could easily do a quick, cheap assembly. Rice, lentils, dried herbs, veggies and spices - looked pretty promising!

    i like this idea a lot...
    i would suggest soup bags for a group rather than soup bags for one in this case...
    but i really like this idea.

    there are some good cooks at Nickelsville.
    someone was making gravy for something tonight when i left camp.
