anyone have any yummy pressure cooker recipies??

    Just bought a pressure cooker for myself and am looking for some yummy recipies if anyone has any to share. Also any good tips on what not to do with one.ie disaster stories for me to avoid..;-)

  2. I grew up with a pressure cooker. My mom used one all of the time. Now I inheritated sp? it...but don't use it. I need some good recipes too. I remember her making a really tender Swiss steak with potatoes and carrots. I know the Presto web site has some.

  3. A friend brought this dish to me while I was recovering from surgery serveral years ago - since then I love to make it this time of year, its not fancy..

    I don't really have quantities down - use your best judgement.. Maybe 3 or 4 large potatoes to a bunch or two of kale. The pressure cooking really softens the kale.

    Layer in the pressure cooker in the following order:
    potatoes - cut up as you would to prepare for mashing
    kale - chopped roughly
    keilbasa - 1/3 - 1/3 inch disks

    Add water according to pressure cooker directions.
    Add any seasoning salt, pepper, garlic..

    Cook for approx. 10 - 15 mins. (follow directions for cooking potatoes.

    When the cooking is completed mash ingredients together, maybe add some butter if you like. It makes great leftovers too.

  5. I love my pressure cookers. I have an old fashioned "jiggle top" style and a new fangled hi-tech model that has about 4 safety valves. I use them several times a week to cook brown rice, beans and other legumes, potatoes and root vegetables. The meat stews I've made are delicious. The best info I've seen for cooking with these gadgets is from Lorna Sass. Just Google "Lorna Sass + pressure cooker" to access a list of all her books. I have two of her cook books, and after 10 years I still refer to them for cooking times.
    Despite the new safety features, I still get nervous when the pressure cookers start to "blow," so I never leave them unattended. I've heard too many stories about food exploding up to the ceiling. But I've never had that experience. Enjoy!

  6. My partner and I dug our pressure cooker out of the cabinet after taking PCC's The Main Course class. Now we use it any time we cook beans or grains, and have been slowly branching out. We made a great lamb stock out of a book called 200 Best Pressure Cooker recipes, which also promises 15-minute risotto. We haven't gotten that brave yet.
    We have a "talkative" pressure cooker, so it's fairly easy to monitor it from a room or two away.
    The Main Course is based on "Intuitive Cooking," and that book is available at PCC, I think, and has the basic rules for beans, grains, and hearty vegetables, plus lots of ideas (not really recipes) for combining foods and flavors.
