Also it's really good idea to grind each pot fresh. I just got a grinder at Target for $15. My last order took at least a couple of weeks. Since it's so inexpensive, I order about six bricks at a time. When I'm down to two I'll order again. As for freshness, I love my coffee but don't seem to notice between fresh/not fresh so I can't help you there. Granted, it's not Peets, so it's not the joy that Peets is - but it is a good balance of taste vs cost. A lighter roast that too is a treat is Tully's Evergreen.
