Can Bar opening this summer in South Delridge

The South Delridge area will see the arrival of a new neighborhood bar and restaurant later this summer, with Can Bar set to sail into the stretch of 17th Avenue SW between Delridge and Roxbury.

David Gradwohl says he and his partners — Josh Baymiller and James Imonti — are hoping for a mid-July open of their nautically themed bar and restaurant, with an eye toward being able to meet the community during White Center Jubilee Days (July 18-22).

The “Can” in Can Bar is a reference to the prominent role canned beer will play in the bar’s offerings. While there will be six taps for draft beer and a full bar, there will be no bottled beer available.

Gradwohl, who is also involved in La Cocina Oaxaqueña on Capitol Hill, says the increase in options for canned beer “spurred the idea” behind ditching beer bottles.

The nautical theme was largely the brainchild of Baymiller, who has spent the last eleven summers captaining a charter boat operating out of Elfin Cove in SW Alaska. Instead of heading north to be on a boat this summer, however, Baymiller has turned a 1960 Owens vessel into Can Bar’s bar, but cutting it in half lengthwise. The bar top was fashioned out of wood from the half of the boat that is not the bar, while other pieces — cleats, rails, port windows — will serve as decoration throughout the space.

There are also plans for patio seating behind the building, though it will not be available when Can Bar first opens. Eventually, however, the partners expect to feature a fire pit as part of the spacious area behind the building, providing a comfortable gathering spot for locals.

As for food, the Can Bar team intends to serve high-quality hot sandwiches, featuring meat they prepare in-house. Though the menu has yet to be finalized, visitors can expect smoked brisket sandwiches and po’ boys, as well as vegan options, to pair with “finger food” sides.

The bar will initially open at 3 p.m. every day of the week, closing at 10 p.m. on weeknights and staying open later on the weekends. Current plans are to have a “happy hour” from 3 to 6 daily with food and drink specials.

Once football season arrives in the fall, the partners intend to open earlier on the weekends to accommodate viewing on the video screens they are mounting around the bar area.

And yes, before you ask – Can Bar will be 21+.
